Lots and lots of cookies

It is that time again. Doctor Who time. The new Season on TV starts tonight and we have one of Kyle’s friends (Drake) coming over to watch it with us. Doctor Who party at our house. As a result of this, we have to have goodies to eat. This means cookies. I have decided that I am going to make a variety of cookies this time. I did not want to stop at just Chocolate Chip and Sugar Cookies. In the end, I made 15 dozen cookies…

Peanut Butter Cookies. Here is the dough pressed down and ready to be baked. You technically do not have to press the dough down beforehand, but peanut butter cookie dough does not spread out as much as other cookie doughs. It also does not get that nice finished look if you do not. It still eats the same regardless. It is all about presentation.

Here is a batch of Peanut Butter Cookies that I baked without pressing down the dough beforehand. As you can see, they did not spread out very much at all. They have an unfinished look. They are not particularly bad looking, they are just not that typical Peanut Butter Cookie look.

Here is the same Peanut Butter Cookie Dough pressed down and baked. It has a much nicer finished look. I used crunchy peanut butter in my recipe so you are seeing the peanuts from the peanut butter in the cookies.

Here is a batch of Sugar Cookies pressed down a little and ready to bake. A common misconception is that all sugar cookies need to be rolled out. They do not. You can scoop them and bake them just like any other cookie. Again like Peanut Butter Dough, they do not spread out as much as other doughs so pressing them down just a little bit helps them spread out a little in the baking process.

Also, I do not like Almond Extract so I do not use it in my cookies. I substitute Vanilla Extract for the amount of Almond Extract that the recipe calls for. It tastes just fine. Do not be afraid of Sugar Cookies.

You do not even have to roll them in sugar before baking them. If you roll them in Sugar and Cinnamon you essentially end up with Snickerdoodles instead.

Here are the baked Sugar Cookies. They get a nice crinkly finish on top if you bake them a little longer. If you bake them a little less time (which I like) they do not get that crinkly look as much. You get nice round cookies when scooping. You can ice these just like any other Sugar Cookie. Do not be afraid of Sugar Cookies. you do not have to roll out Sugar Cookie Dough all the time.

Your traditional Chocolate Chip Cookie. I do not do anything fancy to it. Simply scoop it onto the pan and pop it into the oven.

Your baked Chocolate Chip Cookies. Like I said, I did nothing fancy. They spread out nicely on their own. If you get the dough the right consistency, they will be the perfect cookie.

Here is the dough for the Oatmeal Cinnamon Chip Cookies. I actually goofed on these cookies. They called for Cinnamon in the recipe. I left it out entirely. The cinnamon chips made up for it and they were perfect. You’ll notice that I pressed these down too. The dough was a bit thicker so I erred on the side of caution.

Here are the baked Oatmeal Cinnamon Chip Cookies looking nice and round and delicious. You do not have to have perfectly scooped dough balls to still end up with nice looking cookies. I love that.

So 15 dozen cookies later, I still lived to tell the tale of baking an insane amount of cookies for the kids to enjoy. Of course I was trying to get rid of them in a very quick amount of time on Easter.
