It took longer than I planned, but I am pleased to announce that I have finally managed to fix my [tomato free] Creamy Chicken Enchiladas.
The enchilada filling mixture is on the stove cooling as I type this. That is enough to fill a lot of tortillas. I learned from my experience from the previous batch that had the tomatoes in it and did not reserve any of the sauce. I just mixed it all together. I will probably cook and eat some tonight, however, I am not particular if I have enchilada sauce for mine or not. I am good with cheese. I just hope that I have enough tortillas.
