Birthday wishes

Happy Birthday going out to my Andrew who is now 12 years old. Wow! Where did the last 12 years go? They have been a lot of fun and here is to another 12 wonderful years.

Today I made my first ice cream cake. My mother-in-law got me the Wilton Fanci-Fill Cake Pan Set for Christmas and I got all excited when Andrew decided he wanted an ice cream cake for his birthday. Why? Because this meant that I wouldn’t have to spend $20, $30, or even possibly $40 on an ice cream cake from one of the local ice cream shops. Those ice cream cakes can get expensive. Since he wanted chocolate cake, chocolate icing, and cookies and cream ice cream…so…I was ready.

Well, I forgot that I took the bowl for the ice cream maker out of the big freezer to make room for some things. No big deal, I dug up the manual online as I had since misplaced it and needed the recipe in it anyway (like that recipe). It said to freeze it and to check for frozen-ness to shake it. If you hear liquid, it isn’t ready. If you don’t, it is ready. So I stuck it in the quick freeze part of the freezer. I shook it and it made no noise. I figured we were good to go. I mix my ingredients and pour it into the bowl and proceed to crush my Oreo Cookies while it is churning…getting them ready. I come back 15 minutes later and it is still fairly liquid. I pour the cookies in. Another 10 minutes later it is still fairly liquid. Live and learn! It really does work best if you freeze that bowl overnight. I knew that. I forgot that.

It was all good, I just poured it into the cup of the two cake halves, hoping that the cake wouldn’t absorb too much of the “fluid” before it froze solid in the freezer. I stuck it in and left to go run a couple of errands โ€“ get Kyle’s glasses fixed and check on the prices for Andrew’s gift. I then headed home. It did soak up a little bit, but not too badly.

Well, I forgot to pull out the butter to soften while I was out, so that I could quickly whip up the icing when I got home and get that cake iced. Improvisation is a good thing. Fortunately, I had a tub of whipped topping and pudding to make the icing with. Alas, we simply ran out of time and he went off to Scouts/Young Men’s without cake. It is in the freezer ready for tomorrow though. ๐Ÿ˜€
